Beat the egg whites with a pinch of salt, gradually adding the powdered sugar and lemon juice. Add the 350 gr of walnuts, stirring gently with the whisk until incorporated. Divide the composition into three. Bake the sheets on low heat in a tray lined with baking paper and butter. It is baked when a hard crust forms on top and the edges are brown.
Mix the yolks with the caster sugar and the 6 teaspoons of ness dissolved in a tablespoon of water. Put the pot on the fire, stirring constantly until it becomes like a ciulama. Remove from the heat and while it is still hot, add the butter.
Leave to cool, then assemble the cake. Place the first sheet, then a quarter of the cream and a quarter of the walnuts stopped for garnish. Do the same until the last sheet. Then dress with the remaining cream and garnish with nuts.
According to preference, it can be cut in the form of squares or rhombuses ...... or slice of cake.
