Duck soup with tomato juice

I like to sprinkle the greens directly on the plate, I'm not used to adding it to the whole soup; it seems to me that the color of the soup changes, the vitamins are lost ... I like to feel its fresh taste directly on the plate, plus it has an aesthetic role. :)

The sour, full-bodied and filling meatball soup is only good to eat at lunchtime. The meatballs are those delicious meatballs.

They can be made from mixed minced meat (pork and beef), beef, pork, chicken or turkey, depending on your preferences.

For this recipe I chose pork and beef. In order for the hairs to come out tender and fluffy, we have to take into account a few aspects.

Let's see what ingredients we need for this delicious meatball borscht and how to prepare it!

Ingredients for a 2.5 liter pot

  • 250 grams of minced meat mixture (pork and beef)
  • An egg white
  • 500 milliliters of borscht
  • 50 grams of rice
  • 250 milliliters of tomato juice
  • A capsicum pepper
  • A bunch of dried thyme
  • A bunch of fresh parsley
  • Half a celery root (200 grams)
  • A parsnip
  • A parsley root
  • 3 carrots
  • 2 white onions
  • Salt, pepper, paprika

How to prepare meatball soup

Fill the pot with 2 liters of cold water, which is then boiled. Add to the water the celery, cleaned and cut into 3 large pieces, the kapia pepper cut in half and cleaned of seeds and ribs, a whole cleaned onion, whole cleaned carrots, parsnips, parsley root and a few sprigs of thyme. Add a pinch of salt and simmer for about 40 minutes, recommends.

Meanwhile, prepare the meat for tender and fluffy meatballs: finely chop a white onion and put it to harden in a pan with a little oil and a pinch of salt. Add after 3-4 minutes the washed and drained rice and leave it on the fire for about 1-2 minutes. Turn off the heat and let the onion mixture with the rice cool.

Over the minced meat we put salt, pepper, paprika and dried thyme & # 8211 to taste, egg white and rice mixture with onion. Mix well by hand, then form the hairs. About 20 come out, more than enough for the amount of liquid.

Separately, in a kettle, bring the borsch to a boil.

Meanwhile, check the vegetables, which must be well cooked, but not too soft. These can be cut into cubes at the beginning or after they have boiled.

Add the boiled borsch and the tomato sauce to the pot of chopped vegetables, mix and turn on the low heat, then place the meatballs, one by one. Let it cook for about 20-30 minutes, until the meat and rice are well cooked.

Before turning off the heat you can add a handful of freshly chopped parsley.

Fish soup

The traditional fish soup is a perfect solution when you have no ideas in the kitchen. Fresh ingredients, simple preparation, taste - delicious!


1 kilogram of fish (carp, preferably carp or other smaller fish)
salt pepper
1 finely chopped onion
1 cup of rice
1 carrot
1 tablespoon oil
2 tablespoons borscht juice
1.5 liters

Method of preparation

Take a kilogram of small fish, preferably crucian, about 10 fish. Peel a squash, grate it and squeeze the juice. Wash very well inside, clean with the tail of a teaspoon.

Open at the ears and rinse with plenty of water.

Put them on a plate, add salt (about 2 teaspoons for all) and set aside to prepare the soup juice.

Put 1 liter of water in a pot and let it boil. When it boils, add 1 finely chopped onion, 1 cup of rice, 1 diced carrot and 1 tablespoon of oil.

Bring to a boil. After 20 minutes, the vegetables should be cooked, so add 2 tablespoons of tomato juice and about 1.5 liters of borscht (or to taste).

Salt. If you still want, add a little ground pepper.

Bring to the boil and then add the fish, one at a time.

Leave for a maximum of 10 minutes, when the fish has risen above, a sign that it is done.

Ginger duck

Method of preparation: In a large bowl, put water, soy sauce, freshly sliced ​​ginger, salt, pepper, herbs. Cut the duck breast into thick slices that you place in the marinade. Put it in the fridge overnight. The next day, take the duck slices and season to taste. Heat the grill and then wipe it with duck fat.

Then put the slices of meat on the grill and hold them a little while the meat changes its appearance. Place the ginger slices on the grill for a few seconds. The water in which you made the marinade is boiled for 3-5 minutes. Then take a small amount and put it in the pan. Add tomato juice, spices to taste and keep on the fire until the sauce thickens.

On a plate, place the slices of meat, the slices of ginger and add a small amount of sauce. Ginger helps reduce inflammation and fluidize circulation.   • 300 g white cabbage
  • 100 g carrots
  • 100 g parsley

  • 1/2 bunch of dill
  • 20 g of salt

Method of preparation:

Wash the meat, cut it and boil it in 2 l of cold water, with 20 g of salt, for about an hour. Peel a squash, grate it and slice it. Then fry it for 5 minutes, with finely chopped onion, in 2 tablespoons of oil, then add the vegetables to the soup.

After about 30 minutes, put the sliced ​​cabbage, sliced ​​pepper and a sprig of thyme, (yind all are well cooked, add the soup with tomato juice to taste. At the end, sprinkle with finely chopped dill.

1 medium beetroot
2 carrots
1 celery bulb
1 parsley root
2 matching onions
2 tablespoons oil
1 bell pepper
200 ml of tomato juice

200 ml sour cream or yogurt

Heat the oil in a saucepan, add the finely chopped onion, carrot, celery, parsley root and chopped bell pepper as desired or grated, a pinch of salt, cover with a lid and fry until soft.

Add 4 liters of warm water, adjust the taste of salt and let it simmer for about 10 minutes, then put the cleaned beets and cut into cubes. Let it boil for 20 minutes, add the tomato juice and let it simmer for another 10 minutes.

Add the borscht sachet for extra flavor, turn off the heat and add the larch. Red beef soup can be served seasoned with sour cream or fatty yogurt.
