Slice the cucumber and leave as thinly as possible. Leave the slices in seasoned vinegar or lemon juice, or oil and vinegar or lemon juice.

    Pic 1-3 Mix the ingredients for the spread together in a bowl

    Cucumber - I use English cucumbers which is the best type to use for this recipe. I also peel the skin off for cucumber sandwich but you can leave it on if you wish as long as you wash the cucumber well.

    Cream cheese - Bring out of the fridge to soften so it is easily spreadable.

    Butter- Bring butter to room temperature.

    Herbs- I like to add just a little bit to enhance flavour but feel free to not use any. Herbs you can use include parsley, dill, thyme.

    Black pepper - Add to taste


    Make-Ahead Finger Sandwiches

    Because cucumbers are watery, the sandwiches are best assembled just a few hours before serving to keep them from becoming soggy. But there are a few things you can do ahead of time, so you aren’t doing everything at the last minute.

    One day ahead:

    • Spread butter or cream cheese on the bread and stack it between layers of plastic wrap or parchment. Wrap the stack in plastic and refrigerate until ready to assemble.
    • Slice the cucumbers, salt them, and store them in the fridge on the baking sheet, wrapped well in plastic wrap.

    The day of serving:

    • Once assembled, cover with waxed paper and then a damp paper towel, and store in an airtight container until ready to serve.

    1 – package softened Cream Cheese ( 8oz )

    2 – Tablespoons of Duke’s Mayonnaise

    2 – teaspoons of Italian Salad Dressing Dry Mix

    Rye, Pumpernickel, or white bread

    Instructions

    Place the softened cream cheese in a medium sized mixing bowl.

    Add the Italian Seasoning mix.

    Stir everything together until fully combined.

    Set aside for at least 30 minutes.

    Spread a thin layer of cream cheese on each slice of bread
