RECIPE PREPARATION Squares with telemea:

For starters, I put warm milk, sugar, crushed yeast, a handful of flour (from the weighed one) in the bowl and I waited 5 minutes for the yeast to bloom (to activate). The first is one posted a few years ago, the dough is made with yeast and the second is the recipe below with a tender dough with lard and butter. If you ask me which are the best, I can honestly write that both have advantages and disadvantages, those with yeast grow well and you feel like eating them all when you make them, but after a few days they don't seem as tender, and the ones with lard are very tender and stay for several days, as if as time goes on they are more and more tender. Plus those with lard are prepared quickly do not have to leaven. So in the end it all depends on the time if you want to make them in time, choose the version with lard, if you make them the day before with the one with yeast :).

And no more explanations, I will write the recipe with the mention that I only put half of the quantities.

  • 125g butter
  • 125g lard (you don't have to cut the pig now you can also find it in stores)
  • 175g telemea cheese
  • 500g flour
  • 3 tablespoons sour cream
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt (if the cheese is very salty, don't add salt)
  • 1 egg to grease on top

1. Their preparation is very simple, mix all the ingredients for the dough (Telemea cheese must be finely grated), spread a 4-5mm thick sheet and cut thin sticks.

2. Put the saltines in the tray (you don't have to put baking paper in it), grease them with beaten egg, sprinkle with sesame, cumin, poppy seeds (if you want you can incorporate them into the dough) and bake at 180g C for 8- Ten minutes.

When they are baked, let them cool a bit and then take them out on a plate. They can be kept in a box for up to 2 weeks.

Poor thing with telemea

Ideal as a snack, the pies are preferred by both the little ones and the big ones. Made according to a simple Hungarian recipe that anyone can make, even if at first glance it seems quite complicated. A recipe that I have been making for more than 30 years and I would not change it with any. The dough is simple, they are tender, so if it didn't taste like scallops, you'd say it's a French dough.

It is a real and delicious pleasure, especially on cold winter days to smell the enticing smell of ripe puddings.

In our area they are very appreciated and I don't think there is a family in which not to be made. As a preparation, the technological process is simple, what takes longer is the waiting time for the dough to rise.

This time I thought of giving them another shape and of course to call them "Pogăcițe". They are tender, soft, loose leaves and with a demented taste.

How are telemea stews made?


  • 600 g flour + sprinkled work surface
  • 2 yolks
  • 25 g of yeast
  • 1 teaspoon sugar
  • 10 g of salt
  • 3330-370 ml water (plus-minus, depends on the flour but also on the size of the eggs)
  • 50 ml oil
  • 200 g of dried telemea
  • 150 g butter
  • Optional cumin / paprika / pepper

Method of preparation:

Wallpaper two baking trays with baking paper.

We put the telemeau on the grater with small mesh.

Melt the butter. Be very careful not to boil it, as long as it is liquid.

At the beginning, put the yeast with the sugar in 100 milliliters of lukewarm water. Stir until the yeast softens and allows to rise.

Put the flour in a bowl, add the yeast composition, salt, the remaining water, the yolks and knead until it comes off the walls of the bowl. We need to get an elastic dough, similar to bread.

Leave to rise in a bowl greased with oil and covered with a kitchen towel for half an hour.

Spread the dough on a work surface sprinkled with flour with a size of 60/50 cm.

Grease with half the amount of butter, sprinkle half the amount of telemea. The rest of the butter and telemea, we will use them to fold the dough.

  1. Turn the left side up to a third of the width of the dough, grease with butter, sprinkle the dough.

Spread the dough again with a width of 100 cm and a height of 60, grease with the remaining butter and roll.

Cut into 32 equal pieces and place them in trays lined with baking paper.

Lightly flatten them and leave them to rise for another 20-25 minutes, depending on how hot it is in the kitchen.

Put a tray in the oven at 220 degrees Celsius for 10 minutes, then reduce the temperature to 180 degrees for another 8-10 minutes or until nicely browned.

Recipe for Telemea Tracks - pastry in your kitchen. They are made extremely quickly and with very few ingredients. They are tasty and your family will definitely eat them until they get cold.

  • 500 gr flour

  2. Cut the dough into the squares of the size you want, fill them with cheese, fold them, glue the ends with a fork, grease the triangles with beaten egg and sprinkle with sesame or poppy seeds and bake for 20 minutes, until golden brown.

From flour, yeast, water, salt, oil and milk, make a dough, which you leave to rise for 1 hour. If you are more comfortable by nature or do not have enough time for your guests to come, buy a package of puff pastry.

Mix the cheese with the hot pepper powder until a paste is obtained. Cut the dough into squares as large as you want, fill them with cheese, fold them, glue the ends with a fork, grease the triangles with beaten egg and sprinkle with sesame or poppy seeds and bake for 15 minutes, until golden brown and serve- the heat.

This year I bought one plastic pattern which helps me a lot in cutting these salted cheeses. This pattern is also found in square format (for pies), with crescents or with various forms of biscuits. It is very, very useful! I bought all 4 shapes and I use them intensely.

Mix margarine with lard, add the grated telemeau, enough flour to make a homogeneous dough, wrap the crust in cling film and refrigerate for 40 minutes.

We spread the crust in a thin sheet.

Beat the yolk with the milk and grease the dough sheet, sprinkle poppy seeds, sesame seeds, cumin on top and cut into stick shapes.

Place the salads in a tray lined with baking paper and put in the preheated oven for about 15 minutes, until slightly browned.
