Spicy mushroom stew

If it's Friday, it's "Meatless Monday." I did it stew. No meat. With mushrooms. For some it's "of post”. For others, more Orthodox, no. In this way, I announce to those that, if they remove butter and cheese from the ingredients, they will fit perfectly into the religious canons, provided that there is an "oil and wine release" in the calendar. If it does not exist, bad luck - about the Saxon.

What do you need?

  • 1 kg mushrooms, fresh
  • 3 - 4 green onions
  • 1 tablespoon grape seed oil
  • 30 g butter (indicated with a minimum of 80% fat)
  • 100 g of pepper paste
  • 1 teaspoon spices for pasta "Aglio, Olio, Peperoncino" (a mixture of garlic, hot pepper flakes and parsley leaves)
  • 200 mL semi-dry white wine (Chardonnay de Murfatlar, at your will)
  • A little sea salt (to taste)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley (or a bunch of green parsley)
  • 30 g hard grated cheese (Parmigiano Reggiano, Pecorino Romano, Grana Padano - did you get the idea?) - optional, for serving.

How do you proceed?

Wipe the mushrooms well, remove the stalks (which you cut into 2, 3 - depending on how big they are) and slice the hats.

Peel, wash and chop the green onions into rounds.

In a large saucepan (initially the volume of mushrooms is large - by heat their volume will be substantially reduced) heat the oil and butter. Mixing the butter with oil, the first will not splash everywhere when heated.

Stir in the green onion fat mixture. About 1-2 minutes.

Add the spice mixture “Aglio, Olio, Peperoncino” and cook for another minute, at the right heat. Add the mushroom stalks and let them brown for a minute.



Add the sliced ​​hats, reduce the heat to low, stir vigorously, then cover the pot with a lid. Let the mushrooms simmer for about a quarter of an hour.


Add the pepper paste, match the taste of salt, and after about 10 minutes (with the bowl uncovered) pour the wine into the pot.


Let it simmer, without a lid, for another 10 minutes (the liquid should not drop completely), then add oregano and parsley.

Stir vigorously (again), take the pot off the heat and keep it covered for about 5 minutes before serving.

Spicy mushroom stew serve hot, along with a slice of toast. Optionally, you can sprinkle grated cheese over the stew. But don't kiss them.
