Turkey roll with urda and dried tomatoes

Divide the meat into two pieces, cut and then beat with a hammer into slices until you get two large pieces of meat that can be stuffed and rolled.

Grease the two pieces of meat with this mixture, which is then rolled carefully. Sprinkle with olive oil, salt and sprinkle herbs from Provence. Place the two rolls in a bowl with a little water, possibly a little white wine, to taste. Cover the pan and leave in the oven until tender, approx. 1 hour.

Remove the foil and let it just brown on top. Allow to cool slightly and portion. Serve hot, with a garnish of golden potatoes in the oven.

Method of preparation

Wash and clean the thighs under running cold water. Put them on the fire in salted water together with the carrots and potatoes, let them boil until the fork enters the meat slightly.

Drain the thighs with the vegetables and set aside to cool. We keep some of the juice in which they boiled.

The bell pepper strips together with the cucumbers are placed in a pan greased with a little olive oil. Boiled thighs are grown from place to place and breaded with garlic slices. Put the salted and peppered legs over the vegetables in the pan and sprinkle zatar on top, place the boiled potatoes and carrots over and between the legs. Preparation:

1. Bone the turkey legs (each leg has a bone). If you decide to use lower thighs, mentally prepare to remove about 10 bones :)

2. Boil in a saucepan 1.5 liters of water together with the bones resulting from deboning.

4. Peel the carrots and the second onion. Put oil in the oven dish and then place the carrots and onions cut into pieces about 1-2 cm thick. Preheat the oven to 180 degrees Celsius.

5. Mix the breadcrumbs, mustard and egg whites with the plums, add a little salt and pepper. Spread a boned pulp, salt and pepper, then spread half of the plum filling. Roll it carefully and tie it with string so that it does not come loose.

6. Preparing the filling and rolling it generally takes about half an hour, which is enough time to get a pseudo-turkey soup in the pan on the fire. Pour about 150 ml of hot soup over the carrots in the oven, then place the rolls over and bake for 10 minutes without a lid, then place the lid, reduce the heat to 160 degrees and leave the roll in the oven for about 1 hour and 15 minutes - 1 hour and a half. The rest of the turkey soup can be used to prepare the sauce or it can be frozen for future dishes.

7. Cut the thread from the roll and cut the roll into 2 cm slices. It can be served with almond sauce and mashed potatoes.

Marinated turkey roll with bacon

Sambalul is a sauce of hot peppers, popular in Indonesia, Malaysia, Singapore, the southern Philippines and Sri Lanka, but also in the Netherlands. There are several types of sambal, depending on the ingredients mixed with peppers: Sambal terraces (with shrimp paste and lime juice), Sambal asam (with tamarind) or Sambal kacang (with garlic, shallots and roasted hazelnuts), to list only a few of the existing varieties. I found in the store a simple version of Sambal oelek (ulek), meaning hot peppers ground with a little salt, which I used in combination with Worcestershire sauce to give a & # 8220impul & # 8221 to the turkey breast, before to wrap it in a layer of bacon.

A good turkey came out, fragrant and slightly spicy, with a slightly crunchy bacon crust, which I served with a mashed potato. The recipe is easy to prepare, just consider the time required to marinate the turkey.

Ingredient:
& # 8211 turkey breast, boneless and skinless 800 g

Put the meat in a bag or box that closes tightly and pour the marinade. Turn the turkey to cover it evenly with the marinade and refrigerate for five to six hours (ideally overnight).

Preheat the oven to 190 degrees Celsius. Take an aluminum foil, about 40-50 cm long. On it, & # 8220weave & # 8221 the slices of bacon. Place the marinated turkey breast over the bacon.

Roll tightly and tie the roll with a special rope for the kitchen (NOT plastic, so as not to melt in the oven). Then wrap in aluminum foil: tighten the ends well, and the joint should be up & # 8211 so that the sauce that will form does not come out (in this way, the turkey is made in its own juice, without drying). Put the roll in a tray and put it in the oven. Leave for 40 minutes, then gently unwrap the foil so that the bacon browns. Be careful not to open the foil completely and do not break it, so that the sauce does not flow into the tray! Leave for another 20 minutes, until the bacon is lightly browned.

Turn off the heat and let the turkey breathe for about 15 minutes before serving. Place the roll on a plate, cut it into thicker slices and place on top, with a spoon, the sauce wrapped in foil. If you want, you can sprinkle a little chopped green parsley over the steak.
