In a bowl, grate the sheep's cheese and the cold butter, over it we put the egg, sour cream and flour little by little until we form a dough that is easy to spread.

Place the dough on the work table, spread it out and cut it into strips of approx. 1cm and of desired length, place them in a tray lined with baking paper and grease them with egg yolk mixed with milk and sprinkle over poppy seeds and sesame seeds, then put them in the oven until golden brown, about 20 minutes on medium heat. .

200 g butter or margarine, 4 tablespoons sour cream, 100 g sheep cheese, about 500 g flour, an egg, sesame seeds, poppy seeds

Prepare an elastic dough by kneading the flour well with the melted butter and the cheese given through the small grater. Wrap in cling film and refrigerate for 2 hours.
Remove the dough from the fridge, divide it in two and spread 0.5 cm thick sheets that are greased with egg, sprinkle with sesame or poppy seeds, then cut into thin strips 1.5 cm wide and long approx. 10 cm. Place the strips next to each other in the tray in which I put baking paper. Bake for 15 minutes, until well browned. They are delicious, crunchy, only good for an appetizer. In addition to seeds, you can sprinkle a few sprigs of coarse salt.

Good to know!

✽ Salads can be sprinkled on top with grated Telemea cheese or cheese, instead of seeds and salt. They will be more consistent and particularly tasty.

✽ Grease the salads on top with beaten egg with a tablespoon of milk. They will brown nicely and the seeds will stick better to the dough.

150 gr of salted cow's milk
150 gr flour
150 gr butter
4 eggs
mac / susan / chimen
1 egg for greased

Grate the cheese or put it in a blender with the eggs until it becomes a paste. Add the butter and flour and mix until everything is well incorporated. If the cheese is very salty, do not add salt. From the formed dough spread a 1 cm thick sheet and cut it into different shapes.

Line a tray with parchment paper and place the saltines. Grease them with beaten egg and sprinkle with poppy seeds, cumin or sesame seeds. Leave them in the preheated oven for 10-15 minutes, at a maximum temperature of 200 degrees Celsius.

Salted keto with cumin and sheep's milk

When I did it focaccia keto, a few weeks ago, we were actually trying to make salty keto. In this way, two different recipes came out, starting from the base of the same dough. Different taste, different texture, in terms of adding different ingredients to each. Unlike focaccia, which has become crispy on cooling, with a rather soft core, the saltines have remained fluffy.

  • 6 eggs
  • 200 grams of sour cream 12%
  • 30 grams of yeast
  • 100-120 grams of flour to reduce carbohydrates
  • salt
  • 1 egg yolk
  • 2 teaspoons chimen
  • 120 grams of old sheep's milk

I proceeded exactly like focaccia, only at the end, instead of adding olive oil and herbs on top, I greased the dough spread with egg yolk, then I sprinkled cumin and crushed cheese and only then I cut sticks, directly on the sheet baked. I put them in the oven at 160 degrees for about 25 minutes, until golden. Enjoy!
