  1. Mix the chicken, eggs, mayonnaise, apple, celery, onion, curry powder, paprika, cayenne pepper and salt in a large bowl. Cover and refrigerate for 1 hour before serving (for best results).

Easy and delicious! I used a Granny Smith Apple and red onion. I left out the egg and replaced that with a combination of sliced grapes, raisins, and chopped walnuts. I mixed the dressing in a separate bowl before folding it into the chicken and other ingredients. For the dressing I used 1/2 cup of Hellman's light mayo cut with 1/4 cup of reduced fat sour cream for added creaminess along with the curry, paprika and cayenne pepper. I also added a little bit of salt and black pepper. It chilled for just a couple of hours and it came out really good. Overall, a great combination of flavors! Especially good on whole grain bread!-28 Feb 2012

I love this recipe - quick, easy and delicious. I doubled the curry and used 2 pks of Perdue Shortcuts (roasted). Left out the egg and apple, and added 2 tbsp of Mango Chutney for a touch of sweetness. Then, served on sweet rolls with lettuce. Um, Um, Good!-29 Mar 2011


  • 3 bone-in, skin-on chicken breasts (or 3 cups cooked chopped chicken)
  • 1 tablespoon olive oil
  • 1-1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup plus 2 tablespoons mayonnaise (recommended: Hellmann's)
  • 1/4 cup plus 2 tablespoons sour cream
  • 1 1/2 tablespoons curry powder
  • 1 1/2 tablespoons honey
  • 3/4 teaspoon salt
  • 1/2 cup salted cashews
  • 3 stalks celery, diced
  • 1 cup seedless grapes, halved
  • 3 scallions, finely sliced
  • Pinch cayenne pepper (optional)

Preheat oven to 350°F. Line a baking sheet with aluminum foil.

Arrange chicken breasts skin-side up on baking sheet. Coat with olive oil and sprinkle both sides with kosher salt and pepper. Roast in oven for 35-40 minutes, or until done. Let cool.

In the meantime, combine mayonnaise, sour cream, curry powder, honey and salt in a medium bowl.

When chicken is cool enough to handle, remove skin and pull meat off bones. Cut into small bite-sized pieces. Add chicken to dressing, along with cashews, celery, grapes and scallions toss well. Taste, adjust seasoning and add pinch of cayenne pepper if desired.

How to Make Chicken Salad with Strawberry Poppyseed Dressing

Like most other chicken salad recipes, this one comes together in a flash. If you have leftover roast chicken or rotisserie chicken, you’ll definitely want to chop some of it up for this salad.

Otherwise, you can quickly poach some chicken or use leftover grilled chicken.

To make the dressing, simply blend all of the ingredients together in a food processor or blender, leaving the poppyseeds to add last.

Then mix the chopped chicken with Greek yogurt, sliced strawberries, chives, basil or mint, and some of the dressing.

Place the chicken salad on top of a bed of lettuce and drizzle some extra dressing over the top. Then devour!

Served over a bed of lettuce or fresh spinach like we did earlier this week (and I did twice in a day!), or on a croissant like we did a couple of months ago, you can’t go wrong with this fresh and colorful chicken salad.

I can just see gramma plucking her fallen salad bits off of the glasses hanging from her neck now while she once again tells my strawberry fields story for the gajillionth time. Some things never do get old.


Pack Up Your Picnic

As we head into the weekend – that is hopefully filled with sunshine and lawn games – I wanted to sign off with a perfect picnic recipe for curried chicken salad. There is something about the cool temperature of the chicken mixed with the flavorful heat of the curry that screams summer. Or at least whispers spring. And what really makes this dish a favorite is the balance between the creamy mayo and other crisp ingredients.

But mayonnaise, the key ingredient, usually hovers around 100mg of sodium per tablespoon, and this recipe often doesn’t make the low sodium cut. Boy’s Mom, however, didn’t take no for an answer. A few years ago, she picked up a Heart Healthy Living magazine from the doctor’s office and was delighted to find a bevy of tricks, tips, and recipes that would help her fill my tummy with good food. Her relationship with HHL began simple, using expert advice to create powerful, low sodium seasoning blends. But soon, she found that the more she read and the more she tried, the more confident she felt in taking risks and manipulating recipes on her own. Slow roasted pork, chocolate pudding, truffle tamales – the low sodium meals coming from her kitchen never disappointed. A constant ten out of ten.

Among all the masterpieces, though, my absolute favorite has to be her Curried Chicken Salad which she expertly adapted from a HHL recipe. The original recipe calls for sour cream, which, for a dairy product, is actually very low in sodium. Only 20mg per tablespoon. But I like to keep my numbers as close to zero as possible and to fulfill that request, Boy’s Mom swapped the sour cream for crème fraîche. At zero mg of sodium, it is a light, creamy, sodium free substitution. She also left out the almonds (because I’m allergic) and used cranberries instead of raisins (because even raisins have about 10mg of sodium per serving).

I have yet to make the chicken salad on my own, but I have eaten it many times and I can fully guarantee that this is a low sodium show stopper. So start mixing, chopping, and boiling. Have a wonderful weekend, go find some horseshoes, and chow on.

Ingredients

  • 2 skinless, boneless non-brined chicken breast halves (about 8 ounces)
  • 1 tablespoon of olive oil
  • Dash of sodium free onion powder
  • Dash of sodium free garlic powder
  • 1 Gala apple, cored and chopped
  • 1/2 cup chopped green onion
  • 1/2 cup chopped celery
  • 1/3 cup cranberries
  • 1/2 cup crème fraîche
  • 2 teaspoons curry
  • 1 teaspoon honey
  • 1/2 teaspoon ground ginger
  • Dash of cayenne pepper.

1. Heat a medium nonstick skillet over medium heat.

2. Coat chicken with olive oil and rub with onion powder and garlic powder.

3. Cook 4 to 5 minutes on each side or until no longer pink. Cool slightly and cut chicken into bite-size pieces.

4. In a medium bowl combine apple, green onion, and celery. Add the cooked chicken and cranberries.

5. In separate bowl, combine crème fraîche, curry, honey, ground ginger, and cayenne pepper. Stir until smooth. Set dressing aside in the refrigerator.

6. When ready to serve, spoon dressing over the salad and stir to cover all. Cover and chill 1 hour. Scoop into bib lettuce leaves, slap on toasted, salt free bread, or eat on its own with a spoon. No matter how you snack, you’ll be satisfied.


Set the EGG for direct cooking without the convEGGtor at 250°F with a cast iron cooking grid.

Season the chicken breasts with green curry rub, brush lightly with olive oil. Place directly on the cast iron grid and smoke for 45 minutes or until internal temperature reaches 165°F. Remove from the EGG and let rest. Brush naan bread with olive oil and grill.

Cut the smoked chicken breasts into bite-size pieces and mix with the mayonnaise or Greek yogurt, red onion, green onions, red and green bell peppers, celery, salt and pepper. Combine the mixture well and serve over mixed greens. Salt and pepper to taste.

Homemade Green Curry Rub

For the green curry rub, mix all ingredients together in a small bowl. You can make this as spicy as you wish by adding more chili powder and or crushed red pepper flakes.
