Homemade chicken liver pate

Wash the liver well, let it sit in cold water for about 30 minutes.

We clean it of the skins carefully, we wash it for the last time.

Put it in a pan, add the cleaned onion and cut in half.

We also put the cleaned puppy, salt, peppercorns and bay leaves.

Cover everything with water, put on fire.

When the foam forms, take it with a spatula and let it boil for 30 minutes.

After the liver has boiled, we pass it under a stream of warm water, drain it well and let it cool.


We put the cold liver in the robot, together with the onion, the butter at room temperature, the yolks passed through the small grater, we mix until we obtain a paste.

Add salt and pepper to taste, mustard and thyme.

I was mixing for the last time.


We will get a creamy pate. I lost 550 g of this amount.

We put it in a saucepan and let it cool.

If you want to keep it for several days, divide it into several pans, and put a little olive oil or melted butter on top.
