Muffins with cherries

And because I have 5 egg whites left from the diplomat cake, I thought I would make some muffins quickly. Well done! They are delicious :)

  • 5 egg whites
  • 5 tablespoons sugar
  • 8 tablespoons flour
  • 3 tablespoons oil
  • vanilla essence
  • a handful of frozen cherries
  • a baking powder
  • a pinch of salt

Preparation time: less than 15 minutes


Put the cherries in a strainer and let them drain. The egg whites are mixed with hard foam, adding a tablespoon of sugar. The result will be a glossy meringue. Add the oil and essence and mix for another minute. Mix the flour with the baking powder and carefully incorporate it into the egg whites. The thawed and drained cherries are added to the composition, but we keep a few to place on top. Grease the forms with a little oil, pour the composition on 3/4 of the form, put the preserved cherries on top and put it in the preheated oven at 180 ° for 25-30 minutes.
