Turkey breast strips with pea puree

Turkey breast strips with pea puree

I washed the turkey breast, then cut it into strips. I gave it spices and put it in the fridge for about an hour.

In a bag, I put the cornflakes and crushed them a little, in a deep plate I put flour, and I mixed the eggs with milk, salt, pepper and chilli flakes. I put the strips of meat through the flour, the egg and the cornflakes, then I placed them in a tray with a baking sheet. I put them in the preheated oven for 15-20 minutes and I turned them once, to brown on both sides.

I put the peas in boiling water and boiled it for 30 minutes, and I hardened the onion a little. When it was ready, I mixed the peas with the onion and butter in the blender.

We stretch the pieces of meat and overlap them to have a large and flat piece. Place the vegetables on top in a thin layer and put the mozzarella at one end.

Roll carefully and place in a heat-resistant dish. Pour over the mixture made of water, wine, tomato puree, olive oil, a little salt. Add a bay leaf or two and sprinkle over peppercorns.

Leave in the oven at 210 degrees for 15 minutes with the dish covered and another 15-25 with it uncovered to reduce the water and brown the meat. When it is well browned, remove the meat to a plate with a little sauce.

Cut with a very sharp knife and serve hot, I accompanied with some steamed potatoes and then browned a little in the oven.

How to fill and bind a turkey roll?

Since the filling is sweet, I decided to bring a note of acidity and & # 8222viata & # 8221 with the help of mustard. I have a classic Dijon mustard with berries. I salted the slice of meat and greased it with a spoonful of these mustards and only then I distributed the fruit filling. Finally came the turn of walnuts and hazelnuts (which I cut big out of the knife).

I rolled the turkey breast long, starting from front to back. Then I tied the roll with the kitchen twine. I seasoned it with salt and outside (pepper had before).

The remaining filling can be baked in the tray or in a small heat-resistant form.

How and how much is the roasted turkey steak baked in the oven?

I placed the roll in a steak pan and greased it well with oil. I gave him another round of salt and pepper on the outside. I poured 200 ml of water into the tray and covered everything with aluminum foil. I put the steak in the preheated oven at 200 C for the first 30 minutes. Then I removed the aluminum foil. The steak looks like this: whitish. Not too floury & # 8230 not having skin nor does it brown too much.

So I made a glaze that would give shine, color and aroma to this roll. In a small bowl I mixed 2 tablespoons of fine apricot jam (recipe here) with the juice squeezed from half an orange and a teaspoon of fine mustard (without berries). I thinned this glaze (glaze) with 1-2 tablespoons of the sauce formed in the tray. It should not be too fluid because it will flow from the meat!

With the help of a brush I bathed the turkey steak with some of this sweet-sour icing. I threw in the tray two coats of whole dehydrated fruit and poured another 100 ml of hot water.

I raised the oven temperature to 220 C and put the steak back in the oven, without aluminum foil, for 30-35 minutes. At intervals of 10 minutes I applied the glaze on it (2 more times). With each layer of icing, the steak becomes redder and more glossy. Superb!

After the last glaze, I left the steak for another 15 minutes to catch the final color. Ready! This is what it looked like when I put out the fire and took out the tray.

I lightly covered the tray with aluminum foil and let the steak rest for 15 minutes. Do not serve as soon as it has been removed from the oven!
