Turkey breast strips with pea puree

I washed the turkey breast, then cut it into strips. I gave it spices and put it in the fridge for about an hour.

In a bag, I put the cornflakes and crushed them a little, in a deep plate I put flour, and I mixed the eggs with milk, salt, pepper and chilli flakes. I put the strips of meat through the flour, the egg and the cornflakes, then I placed them in a tray with a baking sheet. I put them in the preheated oven for 15-20 minutes and I turned them once, to brown on both sides.

I put the peas in boiling water and boiled it for 30 minutes, and I hardened the onion a little. When it was ready, I mixed the peas with the onion and butter in the blender.


We stretch the pieces of meat and overlap them to have a large and flat piece. Place the vegetables on top in a thin layer and put the mozzarella at one end.

Roll carefully and place in a heat-resistant dish. Pour over the mixture made of water, wine, tomato puree, olive oil, a little salt. Add a bay leaf or two and sprinkle over peppercorns.

Leave in the oven at 210 degrees for 15 minutes with the dish covered and another 15-25 with it uncovered to reduce the water and brown the meat. When it is well browned, remove the meat to a plate with a little sauce.

Cut with a very sharp knife and serve hot, I accompanied with some steamed potatoes and then browned a little in the oven.

I lightly covered the tray with aluminum foil and let the steak rest for 15 minutes. Do not serve as soon as it has been removed from the oven!
