  • 1.25kg (2 3/4 lb) leftover mashed potatoes
  • 1L (1 3/4 pints) chicken stock
  • 100ml (4 fl oz) semi skimmed milk
  • salt and freshly ground black pepper to taste

  1. In a medium soup pot, melt butter over low heat, and sauté onions until tender. Stir in the mashed potatoes, and then slowly add the chicken stock. Stirring, add milk (use more or less to achieve desired creaminess). Cook until heated through and season with salt and pepper to taste.

Tip:

This is a great base recipe. You can add double cream instead of milk for a more luxurious soup, grated Cheddar and bacon for a hearty soup, or chopped fresh herbs and grated Parmesan to really make something special out of mere leftovers. Use vegetable stock for a vegetarian version.

Left Over Salad Soup Recipe A salad bowl of wilting dressed leaves that’s been left for too long is a depressing sight to people who believe in enjoying simple food from quality ingredients. You can also use those fridge-bottom salad vegetables that are looking a little past their best – wilted lettuce, wrinkly tomato or that slightly soggy cucumber. Of course, there are limits here: don’t use anything that’s really too far gone. The great thing about this recipe is that it’s so easy to make, taking about 15 minutes in total. Just add the salad to some oil in a saucepan, fry it off for a few minutes then add vegetable stock. Cover, and let it gently simmer for about 10 minutes, and it’s ready to blitz with a stick blender (or transfer to a food processor or blender) and blend until smooth. Another bonus is that this soup also freezes very well. Add some salt and pepper at the end to taste, or how about some soy sauce for a hint of umami? We garnished our soups with some sliced radishes for a hint of heat and some crunch, contrasting with a little cool shredded parsley. To make this a little more special add a glug of white wine, or a swirl of cream. So the next time you are over enthusiastic with the quantity of salad pop the remains back into the fridge and make this for the next meal. Leftover lunches and dinners are underrated. Using what you have in the fridge can be the easiest way to repurpose last night's leftovers and make a totally new and flavorful meal. It's also budget friendly, as you might already have most of the ingredients in the pantry. Combining leftovers is a great way of finally using the little bits and pieces of vegetables that you have in your fridge and freezer before they go to waste, and it's a great way to use pork that perhaps came out very dry.

Our leftover pork and cooked potatoes is not a replay of the dinner you already had, but instead a take on a decadent hash in a creamy sauce. We used leftover pork loin, but any cut of cooked pork will make a great dish as well. Cream of mushroom soup, comforting peas and carrots, and some savory and spicy add-ons like Worcestershire and Tabasco sauces combine to make this a hash with a ton of flavor—great for lunch or dinner. Serve this dish with biscuits or cornbread and a tossed salad for a complete and wholesome meal.

Be mindful that the FDA recommends that all food leftovers and opened packages should be consumed within a week—some earlier than that.


SIMMER THE BONE FOR ONE HOUR


After one hour, remove the ham bone from the water and place it on a plate to cool.


Let the broth continue to simmer while you prepare the potatoes.


I leave the peel on the potatoes but you can peel yours if you prefer. Wash the potatoes then slice them in half, then slice each half again. Cut across the potato to cut it into about half inch or one inch cubes.

Just mark it up to getting older, but I’ve about stopped peeling potatoes when making most recipes. Even my mashed potatoes. It makes life much more simple. Smile. Besides, they add more flavor.


Place the potatoes in the pot of broth. Let this cook until the potatoes are fork tender. About 15 minutes. Stir it occasionally as it cooks.


Pull the meat from the ham bone once it’s cooled enough to handle. You can leave this in chunks or dice it up smaller. Your choice.


When the potatoes are done, use a slotted spoon to remove about half of them from the pot. Don’t worry about getting any carrot or onions along with the potatoes. We’re going to add this all back in shortly.


Use an Immersion Blender to cut up the vegetables left in the pot.

If you don’t have a blender, you could also use a potato masher to mash the potatoes.


Add the can of evaporated milk.


Place the vegetables you removed back in the pot.


Add the meat from the ham bone to the pot.


Stir everything together and let it heat back up. The canned milk will cool it down some so warm it back up but don’t let it get back to a simmer. Remove from heat. Taste the soup and add salt and pepper as needed if desired.


Enjoy!

Serve the soup while it’s good and warm.


To get started with the soup, we first must have leftover steak or some steak hanging out in the fridge. If you have steak already cooked, cut it into 1 inch cubes and move on to the next step. For fresh steak, cut it into 1 inch cubes and sear it on all sides in a hot dutch oven or heavy bottom pot. I did mine in batches.

After all of the steak has been browned, remove it from the pot and set it aside. Then we add in the diced onion and let it caramelize. Now it is time for the minced garlic, dried herbs, and the sliced mushrooms.

We want to get them softened and browned so they look like this:

Then we add in the beef broth and the soup is almost finished! After the broth, I like to add in a thickener. My preference is Xanthan gum because it only requires a teaspoon and it is low carb friendly. You could also make a slurry. After I add the xanthin gum, I bring the soup to a boil so it will start to thicken.

Now it’s time for the steak! Tun off the heat and add in the steak, then ladle into bowls and serve.
