I filled these delicious shell-shaped biscuits with jam. They can also be filled with jam, nutella, various creams or peanut butter. I was inspired by Laura Adamache. They are very delicious!

RECIPE PREPARATION Biscuits with jam:

In a saucepan put diced butter, water, salt and sugar. Leave the pan on low heat until the sugar and butter melt. Turn off the heat and leave the mix aside for 10 minutes. In a bowl put flour and baking powder. Mix and pass the flour once through a sieve. After 10 minutes, add the flour over the sugar and butter mixture. Mix a little of everything, until the composition binds. Knead the dough until it becomes homogeneous. Wrap the dough in cling film and leave it in the freezer for 20-30 minutes. Powder the work table with a little flour and start spreading the dough with a spatula. Cut the dough with a cup. in each circle put a spoon or a teaspoon of jam / jam / nutella etc. Seal the edges well by pressing them with a fork. Place the biscuits in a tray lined with baking paper. Bake them in the preheated oven at 180 degrees C, for 12 minutes, or until they are discreetly browned on the edges. The surface of the biscuits must remain white. We powder them with sugar and we can serve them.

For some time, in the big cities of Romania, the pleasure of tasting good wines has been rediscovered. This is not a bad thing because we have a certain tradition in this direction. Complemented by a greater attention paid to obtaining balanced and correctly composed wines, a trained curiosity and weight, it slowly but surely becomes a cultural way of approaching the fun guilty of the weekend, moving away with big steps from the vodka party. and diazepam and the cheerful but retarded carcalete. As unusual as it may seem, these people also need something to eat, the main quality of these snacks being the elimination of cutlery from the equation as much as possible.
If such an event happens to you at home, try this appetizer with confidence, a good accompaniment to red wines served especially on such occasions.
For pumpkin appetizer biscuits you need about a cup of baked pumpkin kernels and a cup and a half of flour, 3-4 pieces of thyme, preferably green, half a packet of baking powder, a tablespoon of oil, a teaspoon of salt and one teaspoon of pepper.
Put all the ingredients, except for half a cup of flour, in a blender and mix until it turns into a dough.

Place the ball of dough directly on the baking paper sprinkled with flour and spread it on a thin sheet with a powdered rolling pin. It will seem a little more sticky, it's the pumpkin's fault. Help yourself to half a cup of stopped flour and do the job patiently.
Place the baking paper with the dough in the tray, trace the edges of the biscuits with the tip of a knife and bake in the preheated oven for 15 minutes at 200 degrees Celsius.

After this time, take it out of the oven and break the biscuits carefully. Put the tray back in, at the same temperature and leave until they become brittle and ideal for nibbling, about another 15 minutes.
For homemade pate, I recommend turkey liver. It's just a recommendation. At 600-700 grams of liver use an equal amount of onion, 1 teaspoon of salt and one of pepper, 250 grams of butter, 2-3 sprigs of thyme.

Saute the chopped onion scales in 100 grams of butter. Let the fire be medium. Allow to melt slowly, being very careful not to burn. Eventually cover. When it takes on a golden hue, add the liver cared for by any skins or pieces of iron, cut into reasonable slices. Keep the heat low and cover for even penetration. After a quarter of an hour, uncover the pan, add salt, pepper and thyme and keep it on the fire until the first signs of serious frying appear at the edges of the pieces of liver.

Leave to cool a bit, then grind everything in a blender. When you have obtained the desired consistency, add the rest of the butter, 150 grams, and mix well.
White beach mushrooms, which you have probably seen in the supermarket, are a delicacy appreciated in many parts of the world, some considering them a kind of oysters of the vegetable kingdom. I consider it an exaggeration, however, properly cooked, because otherwise they are bitter, they are a successful company for various appetizers.

Unwrap a few from the bouquet, clean them of any impurities with a brush or the tip of a knife and fry them until they become a pleasant brown in a mixture of butter and olive oil.

For decoration and aroma I put sage leaves in the pan in front of them, in the mixture of hot oils. Treated this way, they become crispy. Just before the end, I threw a few currants in the same pan.

Put turkey pate on each biscuit with a teaspoon or a spatula. Garnish with a mushroom, a crunchy sage leaf and a red and tonic red currant berry.

Yogurt with rose jam and digestive biscuits

I noticed that Romanians are generally consumers of yogurt. Not like the Bulgarians or the Greeks, but they still eat it quite often, which is a good thing and I don't think I have to apologize for the benefits of yogurt anymore. But I noticed (shopping, on the street, among colleagues) and that people often choose bad products. What a yogurt made with powdered milk. I'm not saying that everyone should make yogurt at home, although it's not difficult at all. Not even I'm such a control freak. But it's so easy to read a label when you buy a product.

Look, in the end, I still apologized for the yogurt. My favorite is Greek yogurt, the hard and creamy one, although, I admit, it's a high-fat yogurt. But no one forces you to eat a bucket, and if you consume it in reasonable quantities, there really is no bath.

Greek yogurt can be found in almost all supermarkets and hypermarkets or in some delicatessens in Bucharest (I guess they are in the country).

Obviously, Greek yogurt is great in tzatziki, but there are a few other combinations that I really like, although it's about some sweet options, which could be, as well, dessert, breakfast and snack.

I advise you to let it drain for a few hours (or even a night) before using the yogurt, in a towel placed in a sieve (in the fridge, obviously). It will become stronger, creamier. That's about all the work you have to do. Then put the yogurt in a bowl and sprinkle over it ground or coarsely chopped walnuts and honey. This is one of the combinations. You can replace walnuts with berries, which you now find in abundance. Or put all three.

In the second combination, over the yogurt put some crushed digestive biscuits and jam (whatever you like, I made a version with rose jam and one with peach jam). You can garnish with another biscuit, a "cat's tongue", a cookie, a almond cake or anything else crunchy. I've been eating something like this every day for a week. That and tomatoes with cheese.

Put the composition in a round shape, greased and wallpapered with a diameter of 24 cm. Level and put the jam figs on top from place to place. Bake on medium heat for about 35 minutes and then leave to cool.

When the cake has cooled completely, sprinkle with powdered sugar and cut into slices.
