Rock: (tray diameter - 29 cm) Mix the egg whites with the sugar, add the yolks, water, oil, essence, and at the end, flour mixed with baking powder and cocoa. The obtained dough is poured into the tray lined with baking paper and baked in the already hot oven for 20-25 minutes. Allow to cool and cut in half horizontally.

Cream: Mix the butter with the sugar, then with the yolks, added one at a time and mixing after each one. Add cocoa and rum essence. Continue mixing until a frothy cream is obtained.

Syrup: Put water and sugar on the fire, add the cappuccino powder and rum essence. Bring to the boil, then allow to cool.

Glaze: The chocolate, butter and whipped cream are put on the fire and left until they all melt and the composition is homogenized. Allow to cool to room temperature.

The set: Heat 100 ml of liquid cream, add chopped chocolate and mix until dissolved. Leave to cool for 2-3 hours. Then add the rest of the cream and mix until it doubles in volume.

Assembly: The top is syruped and filled with butter cream. Pour over the icing and let the cake cool. When the glaze has hardened, decorate it with cream, according to your own imagination. Chocolate diamonds can also be used.
