McDonald’s hot fudge sundaes are a legitimate treat, one of the best desserts on their menu. But what makes them taste so good, exactly?

Here are the ingredients in McDonald’s hot fudge topping, according to their website: sugar, water, sweetened condensed skim milk, hydrogenated palm kernel oil, nonfat milk, cocoa, corn syrup, salt, disodium phosphate, potassium sorbate, artificial flavor, soy lecithin, and polyglycerol esters of fatty acids.

Ignoring “polyglycerol esters of fatty acids” for the time being (we’d rather not even think about what those are), there’s one ingredient lurking in there that might be the culprit for why McDonald’s hot fudge is so good. That culprit is the sweetened condensed milk. One of a pastry chef’s best friends, this is often the secret ingredient in lots of fudgy things, from dulce de leche to Key lime pie to, well, fudge. It’s definitely something you should be baking with, if you aren’t already.

When you think of the most popular menu item at McDonald's, a Big Mac or their world-famous French fries are likely some of the first to come to mind, right? But for those who have a sweet tooth and a soft spot for Mickey D's vanilla soft-serve ice cream, the sundae may be a key part of their go-to order. However, one McDonald's employee may convince you to find a new favorite treat at the chain.

Dessy Joseph, a makeup artist in Brooklyn and former cashier worker at McDonald's, went viral on TikTok last month (jumping from 6,000 followers to over 500,000 in roughly four weeks) for spilling the tea on some secrets about the beloved burger chain—the most jarring of which has to do with the caramel sundae. She reveals in her video, "Secrets I know from working at McDonald's Part 2" that the sauces used for sundaes and shakes such as the hot fudge and caramel are stored in little metal bins at the base of the machine.

"Now, the machine gets hot. It heats up you when it's working and then condensation builds," she explains in the video. "Condensation plus tight, closed spaces equals mold. So, there were plenty of occasions where we'd open the thingy and there'd be mold in it and you know what people would do, they would pour the new hot fudge or caramel or whatever on top of the old moldy one and call it a day."

According to an interview she did with Insider, the caramel that's used in the Caramel Frappé is stored in a different manner, so mold shouldn't be a concern. Of course, all of this could just be unique to the McDonald's location she worked at. However, we think it's helpful to know so you avoid ingesting any traces of a potential fungus the next time you go for dessert at your favorite fast-food spot.

McDonald's is home to some pretty amazing fast food items, including a pretty impressive breakfast menu. Its breakfast selection is so good that it's available all-day long for customers to enjoy. But, not everything on the menu should be ordered if you're watching your weight, especially when it comes to their hotcakes.

You can never go wrong with pancakes when you go out to eat for breakfast. But, when you order McDonald&rsquos hotcakes, you&rsquore signing up for a lot of unwanted calories and grams of fat. One serving of Mickey D&rsquos hotcakes has about 600 calories, 16 grams of fat, and 102 grams of carbs. Not only does this meal get its calories from the hotcakes themselves, but also from the syrup and butter that comes with it. The syrup adds 190 calories and 46 grams of carbs, while the salted whipped butter adds 80 calories, 9 grams of fat, and 75 mg of sodium.

If you still can&rsquot resist getting an order of McDonald&rsquos hotcakes for breakfast, just make sure you&rsquore not getting them with the Big Breakfast meal. This meal is so bad for you that it was listed as &ldquoThe One Menu Item You Should Never Order at McDonald&rsquos&rdquo by Eat This, Not That! They said that this menu item is a &ldquolingering reminder that the Golden Arches is the infamous chain that invented &lsquosupersizing'" and that it shouldn't be ordered for its high calorie and fat count.

So, how bad is it? A single Big Breakfast meal, which consists of three hotcakes, hotcake syrup and butter, scrambled eggs, hashbrowns, biscuits, and sausage, &ldquowipes out your entire day&rsquos recommended allowance of fat,&rdquo according to Eat This, Not That! It also has 126% of a single day&rsquos worth of saturated fat, too! Not to mention that the whole meal weighs in at 1,350 calories, which is more than half of the recommended daily calorie intake (2,000 calories).

Wow, that's a lot of calories -- and food! Though the nutrition facts for McDonald's hotcakes are pretty unhealthy, you can still enjoy them in moderation. And when you do order them, make sure that you're going easy on the syrup and butter!


McDonald's began offering Buttermilk Crispy Tenders in the US in 2017.

One reviewer said they're basically "Chicken Selects 2.0," but the company has said it's made improvements regarding the quality of the meat and the sauce options.

If you follow these simple instructions to the tee—you will be delighted with the sauce and yourself for mastering this simple recipe. Once you learn how to make your own, you will never reach for store bought fudge sauce again!

You are going to love the delicious flavor and perfect texture of this recipe. Even though the ingredients are ones you probably already have on hand, the taste is like something you would find in a gourmet sweet shop! Although this recipe is quick and easy, the trick to achieving perfect, smooth texture is the cooking and the blending.

The cooking allows the sugar to bind with the other ingredients too hot, and the sugar burns, too cool or too short, and the sugar could end up grainy or crystallized. The blending has to do with working air into the sauce, or aerating it. There is probably enough sugar in it to keep fine at room temperature, but it is always safer in the fridge and will keep fresher. Reheat in the microwave in small, 20-30 second increments of time.
  • How long will hot fudge sauce keep in the fridge? This sauce can be used up to one month if kept in the refrigerator. If you bottle this to store it, using professional bottling techniques after you make it, it will last from 6-12 months, unopened, in the fridge.
  • Can I make this in the microwave? There are recipes out there for microwave hot fudge, but the best results for homemade hot fudge sauce are achieved through cooking on a traditional stovetop. The heat in microwaves just isn’t as reliable. This recipe is best made on the stove top—it is still simple and quick to make.

DID YOU KNOW? Hot fudge sauce is considered low level candy making. Candy making is comprised of anything that has a main ingredient of sugar. It is a finicky science and small missteps can be disastrous. Don’t fret though, if you can follow instructions then you can make candy.

A common mistake in candy making is cooking the sugar too fast. When a candy recipe says “bring to a boil” you should warm it at low-medium heat until everything is melted, then turn the heat up to medium high until boiling begins. Then, always reduce the heat to medium to sustain a simmering boil. If you just flip the heat up to high, you risk burning or otherwise ruining your sugar. Doubling a candy recipe can be difficult as it effects the cooking time, pot size, and more. Substitutions are unpredictable in candy making because each ingredient has a very specific purpose. This is cooking chemistry. Unless you are an experienced candy maker, just stick to the recipe.
