We start by soaking the gelatin according to the instructions on the package.
Rub the yolks with the sugar until they turn white.
Heat the milk and add it over the yolks (warm) and then put the whole composition in a bain-marie, stirring constantly. After the composition thickens (10 minutes), set it aside and add the gelatin, stirring quickly until it dissolves. Let it cool. When it has cooled a bit, add the whipped cream that we beat with the vanilla sugar and put it in the fridge until we prepare the cake tray.
We wrap a round tray with transparent foil and start to place the fruits. I put the pineapple slices at the bottom of the tray and in the middle of each I put 2-3 pieces of raspberries. On the edge I put kiwi and oranges and bananas in the middle. It also depends on you how you want it to look. .
After I arranged the fruits with great care (to stay somewhat fixed) I poured half of the composition that in the fridge should have thickened a bit. Sprinkle banana slices over the composition and pour the rest of the composition. We place a starter of biscuits that we syrup in pineapple juice or orange juice.
Cover with foil and refrigerate for at least 4 hours.
After the cake is set, take it out and turn it over on a plate.
