Ingredients

For the pesto

  • 3 Cups fresh basil leaves
  • 2 cloves garlic, chopped roughly
  • 1/2 Cup freshly grated Parmesan
  • 1/4 Cup walnuts
  • 1 Cup extra-virgin olive oil

For the pasta salad

  • 1 medium-sized eggplant, diced
  • 1 medium-sized zucchini, diced
  • 1 Tablespoon extra-virgin olive oil
  • 1/4 Cup Salt and pepper, to taste
  • 1 Pound fusilli, cooked according to package directions and cooled
  • 1/2 Pound snap peas, chopped roughly

Pesto Pasta Salad with Zucchini, Eggplant, and Snap Peas - Recipes

Wow – that’s a long title for a recipe! I even left out the word “salad” after pasta. Although I developed the recipe as a pasta salad, the second time I made it I thought it would be delicious, if not better served hot as well. A flexible recipe is always a good thing. Plus, I read an article that suggested how you word a food item in a restaurant can completely dictate its attraction to diners so I figure a few Italian words in a recipe title make it sound appealing!

I am spending some time in Rhode Island right now. When I am not in my home kitchen, I often like to wing it when planning meals and cooking. Not having all my favorite equipment at my disposal or every last ingredient in my pantry proves to be a fun challenge for me, most of the time.

Stopping at the farm stands, seeing what is fresh and planning a menu around the seasonal bounty is one of the many things that I love about living in New England, especially at this time of year.

Cacio e Pepe is a pasta dish that combines ingredients that most members of my family love. Pasta, freshly grated Pecorino cheese and cracked black pepper are tossed in olive oil resulting in a luxuriously rich pasta dish.

I was reading through a cookbook recently that had a recipe for a Cacio e Pepe butter that was made into a log and meant to be used as a topping for pasta, filet mignon or even an omelet. The chef combined the butter in another recipe for a spaghetti with guanciale that was to be served warm.

It got me thinking about the flavor combination and how it could work for a room temperature pasta as well. But, what to put in it? I wasn’t willing to go much further than the farm stand for my produce and thankfully I found the most beautiful sugar snap peas and some lovely, thin and tender zucchini…

I set out to build a pasta salad to bring to a lobster dinner that we enjoyed last Sunday with my husband’s family. I tested the recipe again later this week to bring to another family dinner (my side!). It got positive reviews so I am hoping that this is a dish you can make and share sometime soon.

If you have sensitive palates to feed, you may want to cut back just a bit on the pepper. But for me, a cheesy, peppery, veggie pasta is just the best! I used Campanelle (bell shaped) pasta which is fabulous for a pasta salad especially. Other short pastas should work just fine as well…

This flexible pesto pasta is a keeper for whatever vegetable you have handy

Pesto belongs in the pantheon of flexible recipes. Sure, the classic combination is basil, garlic, Parmesan, pine nuts and olive oil, but I’ve made it with all manner of nuts, hard cheeses and leafy herbs (or other greens) and been perfectly happy.

This is my way of saying: Here is another recipe I’ve tried to design for maximum adaptability and therefore maximum utility in this time of maximum anxiety. This simple, bright and pretty pasta dish from the great Yotam Ottolenghi originally called for anchovies in the pesto, but as a vegetarian I used kalamata olives instead. It’s already a little deconstructed, with the cheese (pecorino) and nuts (pistachios) going in the final dish rather than in the pesto, and you could switch those up at will.

The feel-free-to-substitute nature goes beyond the pesto. Ottolenghi specified thinly sliced snow peas, but guess what we could find in stores? Snap peas. I’ve also made successful versions with asparagus, and I’m confident broccoli would be a success.


Raw Corn, Zucchini and Snap Pea Salad

When corn is in season, you can cook it gently – or not at all, as in this bright and colorful summer salad where it adds crunchy texture in addition to sweet flavor.

Storage Notes: The lemon vinaigrette can be refrigerated in an airtight container for up to 1 week.

In a small bowl, whisk together the oil, lemon juice, vinegar, garlic, shallot, 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Taste, and adjust the seasoning if needed.

In a large bowl, combine the corn, peas, zucchini, radishes, mint, chives, the remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper, and toss to combine. Add half the vinaigrette and toss to combine. Taste and adjust the seasoning, if needed. Sprinkle with feta and pumpkins seeds, and serve with the remaining vinaigrette, if you'd like.


Tips & Tricks For This Bell Pepper Zucchini Stir-Fry

  1. To recap the semi-long story above, snow peas work just fine instead of the listed sugar snap peas.
  2. Any color bell pepper will work, and you could even use yellow squash instead of the zucchini if desired. See, totally flexible.
  3. Walnuts + basil = stir-fry magic. Truth. But. If you don’t have walnuts on hand, another kind of nut will work fine too. I’ll allow it.
  4. For those of you who aren’t down with the chickpeas: I think chicken or even beef would work great here as well. I would cut into pieces and then cook in the skillet first with a little olive oil, salt and pepper. Remove from the skillet and then follow the recipe below. Add the meat back in when you would add the chickpeas. You want about 1 ½ cups of whatever you choose to use (to keep the dish nice and sauce-y).

Delicious. Easy. So much healthier than take-out. Check check check.

Vegan Pesto Pasta with Summer Squash and Cherry Tomatoes

Last year, in an attempt to get my children more excited about vegetables, I started gardening with them. My then-3-year-old was more interested in playing in the dirt of the unused garden beds, but my 5-year-old loved planing the seeds, watering them daily, and watching little edible things grow from the ground.

To honor the beginning of this year’s gardening season, I am sharing with you this vegan Pesto Pasta with Zucchini and Summer Squash. And despite not being able to use garden-fresh veggies yet, this recipe is now among my favorite spring and summertime meals.
