Boil the milk with a pinch of salt and sugar. When it boils, pour the semolina in the rain, stirring constantly with a fork. Let it boil until it becomes like a thick cream. Turn off the heat, add the butter, essence, orange peel and mix well. Put the semolina in 6 small bowls or cups and let it cool.
