Homemade ketchup

I was inspired by vio-dreams' recipe, with small changes in quantity and spices, I didn't put basil and marjoram and I didn't bake peppers, and instead of tomatoes I put homemade broth. The result is very good, I like it (maybe a little too sweet for my taste), but I respected the amount of sugar. Next time I will put less and less celery leaf because boiling together gives a slightly bitter hue. Thanks vio-dreams

  • 3 kg of capsicum
  • 1.5 l house broth
  • 4-5 celery leaves with stem (you only need 2-3)
  • 200 g brown sugar
  • 3 large onions
  • 1 tablespoon salt
  • pepper
  • 5 cloves of garlic
  • 6 hot peppers
  • 10 ml.otet
  • 100 ml oil
  • 2-3 bay leaves
  • 1 tablespoon sweet paprika
  • 1 sprig of rosemary

HOW TO PREPARE RECIPE Homemade ketchup:

I cleaned the peppers, I washed them and put them in a meat sieve with a small sieve, I also cleaned the onions and I also put them in a small sieve, squeezing it well with the juice left. Then I put in a stainless steel pot with a thick bottom, I added salt, pepper, bay leaves, hot peppers, crushed garlic cloves and broth and let it simmer until reduced by half. Then I went through the broth sieve (old as me, but good) I got a very fine paste. I added sugar, vinegar and oil and left it to boil with another aspirin for another 30 minutes. I put them in well-sterilized bottles in time and then covered them with a thick blanket, leaving them warm until the next day. Ketchup is ready to use.

Less sugar again, I think 150 grams is enough

And fewer celery leaves because it gives a hint of bitterness boiling so much
