Home made chips / guacamole

The glues are cut in the shape of triangles.

It & # 39s not a major holiday in Mexico. In fact, it's not even a federal holiday there. which means offices, banks, and stores remain open on May 5, just like every other day.

So what is Cinco de Mayo then?

Cinco de Mayo & mdash celebrated the fifth of May, of course & mdash celebrates the Mexican army & rsquos unexpected 1862 victory over France at the Battle of Puebla during the Franco-Mexican War. That battle represented a great symbolic victory for Mexico and may well have changed the course of the war. You can read more about it here.

Many Mexican-Americans shake their heads at how Cinco de Mayo is celebrated in the United States (Tequila shots? Really?), But there's certainly nothing wrong with using the date as a reason to recognize and honor Mexican culture with some amazing traditional Mexican food.

This year we're going to keep it simple, but still wow our family's tastebuds with these guacamole, pico de gallo, and homemade tortilla chip recipes. These items are pantry staples for most of us, but when you find out how delicious and simple they are to make yourself?

Well, we're here to tell you that you might never buy store bought again.

Guacamole

Guacamole Ingredients:

  • 4 avocados, halved, seeded, and peeled. Check out a fun hack HERE on how to easily peel an avocado.
  • 2 limes, juiced
  • 1 cup onion, finely chopped
  • 1 jalapeno pepper, seeded and minced
  • 3 tomatoes, seeded and diced
  • 3/4 cup cilantro, chopped
  • 3 cloves of garlic, minced
  • Sea salt and pepper to taste

Directions:

  • Add all ingredients to a bowl and use a fork to mash to the desired consistency.
  • Salt and pepper to your taste.
  • Serve right away or cover and refrigerate until ready to use.

Pico de Gallo

Pico de Gallo Ingredients:

  • 6 plum tomatoes, seeded and diced
  • & frac12 red onion, & frac12 white onion, minced
  • & frac12 cup fresh cilantro, chopped
  • & frac12 jalapeno pepper, seeded and minced
  • 1 lime, juiced
  • Sea salt to taste

Directions:

Homemade tortilla chips

These are wonderful because you can spice them up to your liking or even make them sweet! They are thick and super crunchy - perfect for dipping!

Tortilla chip ingredients:

  • Corn tortillas
  • Olive oil or vegetable oil
  • Sea salt
  • Other spices to your taste (such as chili powder, cumin, chipotle powder, or taco seasoning)

Instructions:

  1. Preheat your oven to 400 degrees.
  2. Cut tortillas into quarters and place them onto ungreased baking sheets.
  3. Lightly brush the tops of each tortilla with olive oil, then sprinkle lightly with sea salt or the spice of your choice.
  4. Bake for 15-20 minutes or until lightly browned and crispy.

Tips for Making the Crispy Avocado Chips

While these chips are pretty easy to make, there are a lot of lessons I learned along the way that I wanted to share to ensure your chips come out golden and crispy on your first try.

  • The parmesan cheese is key to this working recipe. Do not reduce the amount of cheese used in this recipe. Doing so will result in soft chips. Parmesan is a dry cheese. When it is baked, it becomes crispy. The cheese is what allows these chips to crisp up. I also used Parmesan cheese to make my crispy keto cauliflower tots, too.
  • You also need to make sure the cheese is evenly spread across the batter. If you have portions of your chip that are just avocado and no cheese, then that part of your chip will not crisp up.
  • Make sure to add lemon juice to the batter. When avocados are baked, they will start to develop a bitter flavor. The lemon masks the slight bitterness.
  • As indicated above, your chips need to be very thin to crisp up. I don't recommend trying to make the chips thicker. You will need a longer baking time and the avocado will become very bitter with the longer baking time.
  • You want to bake until the cheese is golden brown. This is when you know the chips are crispy. If you underbake the chips, they will still be green and soft. If you bake them too long and the chips turn a dark brown, the cheese has burned and the chips will be bitter.
  • I like leaving just a little bit of green on each chip. The green parts are soft, but since most of the chip is crispy, I don't mind having a few soft spots. It adds a nice textural contrast and color.

For the roasted garlic guacamole

Cut off the top third of the garlic head, exposing the tops of the cloves, and drizzle with oil. Wrap in foil and place garlic in the basket of the air fryer. Cook at 400F for 20 to 25 minutes until the cloves are soft. Remove the garlic from the air fryer, unwrap, and allow to cool. Squeeze the garlic cloves into a large bowl.

Place the jalapeño pepper in the basket of the air fryer and cook at 400F until the skin is blackened on all sides, turning 2 or 3 times, approximately 12 minutes. Remove the pepper and cover for 10 minutes. When the pepper is cool enough to handle, remove the charred outer skin. Remove the seeds and dice the pepper. Add to the bowl with the roasted garlic.

Halve the avocados and remove the pits. Scoop the avocado into the bowl with the roasted garlic and pepper. Mash together. Add the lime juice, cumin, 1 teaspoon of the salt, and cayenne pepper and stir to combine. Stir in the onion and tomatoes. Taste and adjust the seasoning. Cover the guacamole with plastic wrap and refrigerate until needed.

For the tortilla chips

Brush the corn tortillas with oil and sprinkle each one with 1/4 teaspoon salt. Cut each tortilla into 6 wedges. Preheat the air fryer to 400F. Working in batches, spread the tortilla chips in a single layer in the basket of the air fryer.

Cook for 4 to 6 minutes, turning once halfway through, until crisp. Remove and repeat with the remaining chips. Allow the chips to cool before serving.

By far, the most popular, and most requested recipe in my family for me to make at get-togethers is guacamole. Especially around the holidays, this is the dish I & # 8217m always asked to make in large quantities.

So while there are at least a million basic guacamole recipes already on the internets (well, 3.2 million on Google, actually), not many also detail how to make homemade baked corn tortilla chips to go with your guac & # 8230.

Using Just Six Simple Ingredients

In keeping with my overall theme of & # 8220simple & # 8221, there & # 8217s nothing over-the-top or innovative here that will win me a spot on a TV cooking show. So no exotic Guatemalan peppers. No roasted heirloom tomatoes. Basically there & # 8217s nothing here that you can & # 8217t pick up from the Try-N-Save on your way home from work.

So maybe think of this as a refresher for how to make a solid bowl of fresh guacamole. However, if you fancy yourself quite the cook, and are pretty handy with an avocado, then perhaps you will want to skip ahead to making your own corn tortilla chips.

So what are the six simple ingredients for awesome guacamole? Avocado (of course), Onion, Garlic, Tomato, Cilantro and Lime.

Honorable mentions go out to jalapeño peppers (though they & # 8217re not so popular with everyone in my house), corn, bacon and even mango.

A word on avocado types: In most of the Midwest, we only get one type of avocado. The ever present Haas from Mexico. What always mystifies me is why the numerous varieties of tasty avocados that are grown in California don't leave that state. When I spent a few months working in Santa Monica, I & # 8217d hit the Farmers & # 8217 Market every Wednesday and would be blown away by all of the great locally grown avocadoes. Gwen. Zutano. Even Strong. They were all amazing. And Californians keep them all for themselves.

Preparing and Uses

The best way to mash avocados? With a potato masher. I scoop out all of the avocado into a bowl, add a generous amount of salt and start mashing. It only takes a few seconds.

You could also use a traditional molcajete here. A molcajete is basically a huge stone mortar & pestle that & # 8217s used to prepare a lot of Mexican cooking. On a trip once in Mexico, I actually considered bringing one back. I & # 8217m glad I didn & # 8217t. They & # 8217re about 30 pounds & # 8230.and are also widely available at higher end kitchen shops. While they look really cool for serving the finished product, I find the potato masher is a lot more practical.

Next you want to get your lime juice mixed in before the avocados start to brown. The acid in the limes stops this process, and gives it some bright flavor. If your guac turns brown in the fridge the next day (though why would you have leftovers?), Then you probably could have used more lime juice. I use at least 1 file for every 2 avocados.

Onion? 1 medium onion for every 2-3 avocados is pretty good.

Garlic? Probably 3 or 4 cloves to start with. I tend to use a lot more than that & # 8230.

Cilantro? You can't get enough. This is where you get the awesome, fresh herbal flavors.

Secret Ingredient: For seasoning, I & # 8217ve found that Carne Asada seasoning has the right blend of salt, chili powder, cumin and other goodness that & # 8217s perfect in homemade guac.

You & # 8217re probably seeing that this is a no-recipe recipe. The quantities are really up to you & # 8230.that & # 8217s the fun of making it each time. In fact, you could also place all of the ingredients out in separate bowls for your guests, family members and visiting dignitaries to make their own unique blend.

How to Safely Remove the Pit of an Avocado

Just like with cantaloupe, start by scrubbing the avocados thoroughly with some soapy water. If there & # 8217s anything unpleasant on the surface, once you insert your knife you have a good chance you & # 8217ll mix it right in.

Place the avocado on a cutting board, and carefully work your knife around the pit. Pull the avocado open.

Once you separate the two sides, give the pit a gentle whack with your knife

Rotate the knife and avocado half to remove the pit. Now carefully pinch off the pit with your thumb from the top of the knife. You should be able to do this without coming in contact with the blade.

Making Corn Tortilla Chips in the Oven

Who doesn't love warm, salty, crunchy tortilla chips? Hopefully no one raised their hand. There & # 8217s a reason everyone is already full once the entrees come out when there are fresh tortilla chips at the table.

And Making them yourself at home in the oven is super easy. No frying. In fact, if you bake them before you make the guacamole, you should time it out about right.

The guacamole dip is very simple to make as well. The hardest part will be opening, scooping out the avocados and mashing them.


The best way to pick an avocado is to feel it. I put the avocado in the palm of my hand and gently squeeze with my fingers. If the avocado gives a little bit, but not too much, you know it & rsquos ripe and ready-to-eat. Ripe, ready to eat avocados sometimes have a darker color to them. However, color can vary so it & rsquos always best to go by feel first then color. It will feel lightly soft but it will not feel & ldquomushy & rdquo to the touch.

Ripe avocado is perfect to use day of or next day, longer than that and it will get brown. If you want to buy an avocado to use in a couple of days I will buy a hard to the avocado touch, sometimes they look green.
