Dessert cake with dark chocolate and walnuts

The cake with dark chocolate and walnut is part of my collection of blacks with chocolate, but it did not turn out so black because the chocolate was not melted and was not arranged evenly, which is why it is more special.
I ground the chocolate in the robot, but I made sure that larger pieces remained for a more special taste and appearance.
I especially liked the color and texture, but the taste is just right!

  • For a 23/40 cm tray:
  • 8 medium eggs
  • 200 g sugar
  • 200 ml oil
  • 200 g flour
  • 200 g of dark chocolate with 74% cocoa
  • 200 g walnuts
  • a little salt
  • 2 teaspoons rum essence
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda.
  • vanilla powdered sugar

RECIPE PREPARATION Cake dessert with dark chocolate and walnut:

First we turn the oven to 180 degrees. Separate the egg whites from the yolks and sprinkle salt over both. We grind the walnut coarsely. We also grind the chocolate coarsely. Grinding them on the robot will not come out uniform, some will be finely ground and some coarser, which will influence the texture of the cake, for the better, in my opinion. We also grind the sugar, to beat the meringue better and faster. Mix the egg whites, then gradually add the sugar and mix until you get a very firm meringue. Add the yolks, homogenize the composition, then add the oil and essence and homogenize the composition again. Then the flour, gradually added, mixed with baking powder and baking soda. So far I used the mixer, then I removed it and used a spatula. We mix the ground walnut with the chocolate, also ground and we incorporate them in the composition, gradually and mixing gently with the spatula, with circular movements, from bottom to top. Wallpaper the base of the tray with baking paper, and grease the walls with oil and sprinkle a little flour and spread the composition evenly in it. Bake the cake with dark chocolate and walnuts at 180 degrees for 35 minutes, or until it passes the toothpick test. Then let it cool in the pan for 10-15 minutes, dust it with sugar and portion it.
